(including the Nomad Hotel & Side

Hustle, Ixchel and Fonda). His time as a

chef helped him hone his personal

cooking style: bold flavours and vibrant,

    produce-driven food.

El Jardín takes inspiration from across

    Latin America; Mexico, Colombia, the

    Caribbean and beyond,  without

    attempting to replicate any single

cuisine in isolation. The food is

designed to be shared, social and

    expressive. Expect Tacos, Ceviche, and

    lots lots more!

    to work under Michelin-starred chefs

and more recently, has led kitchens at

    The Waterhouse Project and La

    Bibliothèque.

In recent times, Thom has chosen to

focus on his own culinary vision,

    running pop-ups and residencies

    across London, France, and Italy.

His concept, « Bistrot Umami », pays

tribute to his French roots and classic

    cuisine, infused with a creative,

bring pure, sharp flavours to every dish.
