    A little treat for you this week... We welcome

    back chef Philippe Sonou for four nights only.

    Philippe’s innovative modern West African

    cooking is refined, flavourful, welcoming - and

    not to be missed!

    Born in Paris to Beninese parents, Philippe’s

    love for food came from growing up in a house

    full of his mothers delicious cooking. He was

    inspired to become a chef, and spent 18 years

    honing his craft in France, including 3 years

    three years at Paris’s two-Michelin-starred

    ‘Le Mandarin Oriental’.

    In 2021 Philippe moved to London and worked

    as a private chef until in 2023 he competed

    in Masterchef: The Professionals, reaching

    the semi-finals.

    (If you’re a Masterchef fan you’ll agree - he

    was robbed!)

    Philippe launched his Maquis concept in 2025 .

    The menu is built from memory, tradition, and a

    love of West African ingredients, thoughtfully

    expressed through the techniques he has

    learned through his experiences in amazing

    kitchens.

    Philippe joined us for a fantastic week in

    2024, and we are thrilled to invite him back to

    look after the Pasero kitchen, whilst chef

    Diamantis takes a well deserved little break

    in Greece.
